Ingredients

  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup teriyaki sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 tablespoon vegetable oil
  • 1 cup long-grain white rice, rinsed
  • 2 cups water or chicken broth
  • 1 cup frozen mixed vegetables
  • Green onions and sesame seeds (optional, for garnish)

Directions

  1. Heat oil in a large skillet or sauté pan over medium-high heat. Add chicken and cook until lightly browned, 4–5 minutes.
  2. Stir in teriyaki sauce, soy sauce, garlic powder, and ginger powder.
  3. Add rice and water (or broth). Bring to a boil, then reduce heat to low. Cover and simmer 15 minutes.
  4. Add frozen vegetables on top of the rice, cover, and cook another 5 minutes until rice is tender and vegetables are heated through.
  5. Stir everything together, fluffing the rice and coating the chicken with sauce.
  6. Serve immediately, garnished with green onions and sesame seeds if desired.

Notes

  • Using a skillet with a tight-fitting lid ensures the rice cooks evenly.
  • Can substitute brown rice—just add 10 extra minutes of cooking time.
