Ingredients
- 4 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup teriyaki sauce
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1 tablespoon vegetable oil
- 1 cup long-grain white rice, rinsed
- 2 cups water or chicken broth
- 1 cup frozen mixed vegetables
- Green onions and sesame seeds (optional, for garnish)
Directions
- Heat oil in a large skillet or sauté pan over medium-high heat. Add chicken and cook until lightly browned, 4–5 minutes.
- Stir in teriyaki sauce, soy sauce, garlic powder, and ginger powder.
- Add rice and water (or broth). Bring to a boil, then reduce heat to low. Cover and simmer 15 minutes.
- Add frozen vegetables on top of the rice, cover, and cook another 5 minutes until rice is tender and vegetables are heated through.
- Stir everything together, fluffing the rice and coating the chicken with sauce.
- Serve immediately, garnished with green onions and sesame seeds if desired.
Notes
- Using a skillet with a tight-fitting lid ensures the rice cooks evenly.
- Can substitute brown rice—just add 10 extra minutes of cooking time.
