Ingredients

  • 8 ounces elbow macaroni (or any pasta of choice)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup pumpkin puree
  • 1 cup shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional)
  • Fresh parsley or extra cheese for garnish

Directions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package directions; drain and set aside.
  2. In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to form a roux.
  3. Slowly whisk in milk until smooth. Continue to cook until slightly thickened, about 3–4 minutes.
  4. Stir in pumpkin puree, cheddar, Parmesan, salt, pepper, and nutmeg. Cook until cheese is melted and sauce is smooth.
  5. Add cooked pasta to the sauce, stirring to coat evenly.
  6. Serve warm, garnished with fresh parsley or extra cheese if desired.
