Ingredients
- 8 ounces elbow macaroni (or any pasta of choice)
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 cup pumpkin puree
- 1 cup shredded sharp cheddar cheese
- ½ cup grated Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon nutmeg (optional)
- Fresh parsley or extra cheese for garnish
Directions
- Bring a large pot of salted water to a boil. Cook pasta according to package directions; drain and set aside.
- In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to form a roux.
- Slowly whisk in milk until smooth. Continue to cook until slightly thickened, about 3–4 minutes.
- Stir in pumpkin puree, cheddar, Parmesan, salt, pepper, and nutmeg. Cook until cheese is melted and sauce is smooth.
- Add cooked pasta to the sauce, stirring to coat evenly.
- Serve warm, garnished with fresh parsley or extra cheese if desired.
