Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/4 cup vegetable oil (for frying)
For the Bang Bang Sauce:
- 1/3 cup mayonnaise
- 3 tablespoons sweet chili sauce
- 1–2 teaspoons sriracha (adjust for desired heat)
- 1 teaspoon honey
Directions:
- In a shallow bowl, mix flour, salt, and pepper. Place beaten eggs in a separate bowl, and panko breadcrumbs in another.
- Dredge each chicken piece in flour, then dip into eggs, and coat with panko breadcrumbs.
- Heat vegetable oil in a large skillet over medium-high heat. Fry chicken bites in batches for 3–4 minutes per side, or until golden brown and cooked through. Drain on paper towels.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth.
- Toss the fried chicken bites in the sauce until evenly coated.
- Serve immediately, garnished with chopped green onions or sesame seeds if desired.
Notes:
- For a lighter version, bake chicken bites at 400°F (200°C) for 15–20 minutes, flipping halfway through.
- Adjust sriracha for your preferred level of spiciness.
